Okay folks, this salad is so delicious all on its own! But you have to use the special ingredient of baby gourmet cucumbers. If you use regular cucumbers (and I have) it just doesn’t taste the same. These special cucumbers give freshness and crunch to this great cold salad. I use this as a base salad and make many other dishes from it. See below and enjoy!
Ingredients
- 2 cups grape or small cherry tomatoes, sliced in half
- 1 regular can medium pitted black olives, sliced in half
- 4 baby gourmet cucumbers, diced
- 1 can rinsed or 1.5 cups fresh cooked and cooled garbanzo beans
- Optional: Add parsley, olive oil, vinegar, and a squeeze of lime or 2 drops Lime Vitality Essential Oil
Instructions
- Combine ingredients and enjoy!
- I add chopped parsley, olive oil, vinegar, and a squeeze of lime to make this irresistible.

Tabouli
- Add cooked quinoa or bulgar, parsley, lime juice, and olive oil for a chunky tabouli.
Cold Pasta Salad
- 2. To three cups of cooked bowtie pasta, add two cups of this base, a couple of dollops of a fresh Caesar dressing, a 1/4 cup chopped green onion, and a handful of chopped spinach or kale. Combine and refrigerate.
