Waldorf salad was a favorite of mine while growing up. Super simple! Chopped apples, chopped celery, chopped walnuts mixed with Miracle Whip and cane sugar to taste! Yuuuuuumy! According to KitchenProject.com, Waldorf salad was created at New York’s Waldorf-Astoria Hotel in 1896 “not by a chef but by the maître d’hôtel, (dining room manager) Oscar Tschirky.” According to the site, the Waldorf salad becoming immediately popular. Originally, the salad only contained apples, celery and mayonnaise. Only later did walnuts become a beloved part of the recipe.
What I have for you today is the classic version with a few more options. Enjoy!
Ingredients
- 1 large gala apple, medium dice
- 1 large celery rib, medium dice
- 1/4 cup walnuts, broken in large pieces or coarsely chopped
- 1 mounded T of Miracle Whip brand mayo (tangy)
- or 1 mounded T of Mayo with 1 drop Young Living Vitality Lemon Oil
- Sweetner of choice (Stevia, Monkfruit, or Cane Sugar)
- Optional: 1/4 cup of red grapes halved
- Optional: lettuce leaves
- Variations:
- Spicy or candied pecans instead of walnuts
- Raisins instead of grapes
- Entree: Make this salad a meal with the addition of 1/2-3/4 cup of shredded chicken.
Instructions
- Mix apples, celery and walnuts and optional grapes in a bowl. Set aside.
- In a small bowl mix mayo/miracle whip, sweetner and essential oil drop until well-combined.
- Add mayo mixture to apple mixture and gently toss.
- Serve in a fruit cup, salad plate or dessert bowl over a bed of lettuce leaves.
- Serves 2-3
