Here’s a quick idea for bringing a bit of joy to those around you, and in so doing, bringing contentment and joy to yourself.
Just two weeks ago, my teens were dying for school to be over. It’s a shame that school drags on into the summer. Alas, school is finally out. To celebrate summer and encourage my kids, I bought some boxes of popsicles! Who doesn’t love them and many healthy varieties are on the market. I will often make my own from blending watermelon or strawberries with a healthy sweetener. It’s a small, affordable thing to do and it will make everyone in my family happy. What little thing could you do today to bring joy to someone else?

Ingredients
NingXia Red Ice Pops
- 1/2 cup water
- 1 cup NingXia Red
- 2 drops Orange Vitality Essential Oil
Variations
NingXia Red Dreamsicles:
- Substitute 2 drops Orange Vitality for 1 drop Orange Vitality, 1 drop Tangerine Vitality, and 1 drop Lemon Vitality.
NingXia Red Rockets:
- Substitute 2 drops Orange Vitality for 1 drop Lime Vitality, 1 drop Peppermint Vitality, and 1 drop Cinnamon Bark Vitality.
Strawberry Lemon-Lime Popsicles:
- 1/2 cup evaporated cane juice crystals
- 2 pints fresh strawberries, hulled and sliced
- 1/2 cup water
- 4 drops Lime essential oil
- 2 drops Lemon essential oil
- 1 drop Black Pepper essential oil (optional)
- 1/8 teaspoon fine sea salt
Yogurt Parfait Ice Pops:
- 1 1/2 pints fresh strawberries, hulled and sliced
- 1/4 cup honey
- 1 cup plain yogurt
- 1 drop Ocotea essential oil
- 1/2 to 1 cup granola
Pineapple Ginger Lemonade Popsicle
- 12 oz. fresh pineapple, chopped
- ½ cup fresh lemon juice
- ½ cup filtered water
- ¼ cup raw honey
- ½-inch piece fresh ginger, peeled and finely grated
- 2 drops Ginger essential oil
- 4 drops Lemon essential oil
Instructions
- Combine all ingredients and divide evenly between all ice pop molds, leaving 1/4 inch at the top for expansion.
- Put lid on and sticks in.
- Freeze overnight until frozen through.
Free pops from the mold
- To free ice pops from the mold, dip is warm water until the pops slide right out.
- If the stick comes out before the ice pop, reinsert the stick and put the pops back in the freezer for a few more hours.
To store
- Remove all of the ice pops from the molds, place them on wax paper-lined tray an drefreeze for 10 minutes.
- Place ice pops in freezer bags, separated by strips of waxed paper. Enjoy!
