Our New Year’s Dinner will be simple: ham, mashed potatoes, green bean casserole, and Texas Caviar. My kids wouldn’t touch warmed black-eyed peas served in the traditional manner. But when I pulled out the “caviar” they loved ’em! Here’s my recipe and the secret ingredient.
Ingredients
- 2 cans cooked black-eyed peas, drained and rinsed
- 2 chopped ripe and sweet tomatoes or cherry tomatoes halved
- 1 bunch green onions sliced thin (or favorite onion, chopped)
- 2 bell peppers, any color, diced
- 1 small can sliced ripe olives, drained
- 1/2 container of mango salsa (optional secret ingredient - yummy)
- 1 seeded and chopped raw jalepeno
- 1/2 cup of frozen non-gmo corn (optional)
- 1/2 cup chopped cilantro (or parsley)
- Dressing:
- Olive oil
- vinegar
- fresh lime juice
- Garlic powder
- Onion powder
- Salt
- or add Zesty Italian dressing to taste
Instructions
- Make sure your beans are rinsed and drained.
- Mix all ingredients above together except for dressing.
- Mix the dressing ingredients separately and pour over mixed salad.
- Optional instead of homemade dressing:
- Make a shaker bottle of "packet" Italian dressing or
- Purchase bottle zesty Italian dressing.
- If using shaker dressing or bottled dressing, add JUICE of 1 to 2 limes to the salad to taste.
- Mix the salad, dressing, and lime juice; refrigerate.
- Great as a side dish or a dip with chips.
