Oh my word, we LOVE this easy-to-prepare and nourishing meal on a cold winter’s evening. As long as the ground turkey is not frozen, it may be made from scratch in 20-25 minutes.
Ingredients
- 1 lb. ground organic turkey
- 1 yellow onion sliced
- 4 cloves of garlic minced
- 4 cans of any combination of cooked great northern beans, cannellini beans, and navy beans, RINSED AND DRAINED
- 4 cups chopped kale or baby kale
- 2 small cans of chopped green chilies
- 1 large carton of organic chicken broth
- Salt
- Pepper
- Cumin
- Garlic powder
- Onion powder
- Optional lime wedges
- Optional dollop of sour cream
Instructions
- Add 2-3 tablespoons of coconut or olive oil to a medium-sized dutch oven.
- Brown the onion and garlic for 2 minutes.
- Add the ground turkey and brown thoroughly.
- Add all the rinsed and drained beans to the pot.
- Add the entire carton of broth.
- Season with salt, pepper, garlic powder, onion powder, and cumin to taste.
- Stir in the 4 cups of baby or chopped rinsed kale
- Simmer on low for about 15-20 minutes and serve.
- Add a squeeze of lime and dollops of sour cream if desired.
- Quick, delicious, and easy.
